Ingredients:
1 kg beef (such as beef cheek or short ribs)
3-4 dried chiles (guajillo, ancho, etc.)
1 onion
3 garlic cloves
2 tomatoes
1 tsp oregano
1 tsp cumin
2 bay leaves
Beef broth
Tortillas
Instructions:
Soak the dried chiles in hot water, then blend them with garlic, tomatoes, and spices to create a sauce.
Marinate the meat in this sauce for at least 2 hours.
Cook the meat on low heat with the sauce and broth until tender.
Serve in tortillas, dipping in the consommé.

Add a poached egg, red pepper flakes, or other toppings as desired.
