Ingredients
- 2 Tbsp. canola oil, divided
- 1 lb. ground beef
- 1 Tbsp. taco seasoning
- 1 tsp. kosher salt, plus more to taste
- 1 jalapeño, seeds removed, finely chopped
- 1/2 cup chopped red onion
- 2 cloves garlic, chopped
- 1 (15-oz.) can fire-roasted diced tomatoes with green chiles
- Freshly ground black pepper
- 1 (15-oz.) can refried black or pinto beans
- 4 oz. Monterey Jack cheese, shredded
- 4 oz. sharp cheddar cheese, shredded
- 8 (10″) flour tortillas
- 2 cups cooked white or brown rice, cooled
Step-by-Step Instructions
Preparing the Filling
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the ground beef, taco seasoning, and 1 teaspoon of salt. Cook for 6-7 minutes, breaking the beef into small pieces, until no longer pink. Transfer to a plate using a slotted spoon.
- Reduce heat to medium. Cook jalapeño and onion for about 5 minutes, stirring occasionally. Add garlic and cook for another minute until fragrant.
- Stir in the canned tomatoes and cook for 3-5 minutes until slightly reduced. Return the beef to the skillet, combine, and season with salt and pepper to taste. Let the mixture cool.
Assembling the Burritos
- In a medium bowl, whisk the refried beans with the remaining tablespoon of oil until smooth.
- In another bowl, combine the shredded Monterey Jack and cheddar cheeses.
- For each burrito:
- Spread 1/4 cup of the bean mixture across the center of a tortilla, leaving a 1″ border.
- Top with 1/4 cup rice, 1/3 cup beef mixture, and 1/4 cup cheese mixture.
- Fold in the sides of the tortilla, then tightly roll away from you, keeping the sides tucked in.
- Seal the burrito with a small dab of the bean mixture.
- Repeat to make 8 burritos total.
Freezing
- Wrap each burrito in a layer of plastic wrap, then in a layer of foil.
- Place in a freezer-safe bag and freeze for up to 3 months.
